Rainy day dancing bakers
Today was a classic Fall gray, rainy, chilly day. Av was supposed to have soccer practice this morning, but it was canceled due to the weather. Of course, we didn't find that out until after we arrived at the park, but the drizzle had stopped, so we kicked the ball around for a half hour, stopping a few times so that Av could show me his new dance (courtesy of Daisy Duck). To do the dance first jump front, jump back ,repeat, then clap clap clap, march march march, and slide to the left and slide to the right.
Since today was going to be an inside day, Av decided that today was the perfect day to make banana cake. You must understand two things. 1 - We often bake pretend cakes and cookies to kill time while waiting around, mostly in restaurants. 2 - Av learned the recipe for banana cake from an episode of Blue's Clues. While we'd made many real batches of oatmeal chocolate chip cookies, this would be our first banana cake. Although Shiny only got to enjoy the results and not the joy of mashing bananas, Av did an even amount of the work. I would scoop and measure, and he would pour the ingredients into the bowl. He also helped peel the bananas and was an excellent masher/mixer. And might I add - the cake is quite snacktastic!

Here's our recipe:
Foolproof, One Bowl Banana Cake
35 min 5 min prep | 1/2 | cup margarine |
| 2 | eggs |
| 1 | teaspoon vanilla |
| 2 1/2 | teaspoons baking powder |
| 1/2 | teaspoon baking soda |
| 1 1/4 | cups sugar |
| 1 1/2 | cups mashed bananas (about 5 bananas) |
| 2 | cups flour |
| 1/4 | teaspoon salt |
- Mix all the ingredients together in a large bowl until smooth.
- Pour into a greased or sprayed 9"x13" pan.
- Bake at 350F for 30-40 minutes.
- Can be frozen for later use.
