"Head...Shoulders...Knees and...SOCKS!"

Why am I having anxiety over cupcakes? I am planning on making ice cream cone cupcakes for Av's birthday party at school. We were going to do it tonight for tomorrow, but since Av has decided he wants a Wiggles birthday at school, we now have to go to the party store tomorrow for a party on Wednesday - get all that?

But back to my cake issues.

So I start reading on the web various recipes on how to make the cake cone cupcakes. And a lot of them say that they cones get soggy overnight and the kids don't like them. Someone suggested that you freeze the cupcakes after baking - but we would have to do some major rearranging in the freezer to manage that. And what about defrosting? Or that you bake them the morning of - but would I really get up at 5am to mix, bake, cool, and decorate cupcakes? Am I that crazy? A bit. But I don't think that much. Or should we just let them hang out on the kitchen counter overnight after I've frosted them and wrapped them to keep them safe from the cat? Or let them hang out in the oven (turned off) overnight? Or put them in the fridge?

I won't even get into my worrying about how I'm going to transport them safely to school up a steep hill and over 4 speed tables!
